  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • Fresh corn kernels from 2 ears of corn or 1 cup (150 g) frozen, thawed
  • 1 medium ripe mango, peeled and diced
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 small red bell pepper, diced
  • ¼ cup (40 g) red onion, finely chopped
  • ¼ cup (10 g) fresh cilantro, chopped
  • 1 small jalapeño, seeded and minced (optional)
  • Juice of 2 limes (about 3 tbsp / 45 ml), freshly squeezed
  • 1½ tsp Tajin seasoning
  • 2 tbsp (30 ml) extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Dice the mango into small, even cubes. Halve the cherry tomatoes and dice the red bell pepper and red onion. Mince the jalapeño finely after removing seeds if using.
  2. Drain and rinse the black beans under cold water until the liquid runs clear.
  3. If using fresh corn, cut kernels from the cobs by slicing downward. If using frozen corn, thaw and pat dry.
  4. In a large mixing bowl, gently toss together black beans, corn, mango, cherry tomatoes, red bell pepper, red onion, cilantro, and jalapeño.
  5. In a small bowl, whisk together lime juice, Tajin seasoning, olive oil, salt, and pepper until blended.
  6. Pour the dressing over the mixed ingredients and toss gently but thoroughly to coat without mashing the mango or tomatoes.
  7. Optionally, let the cowboy caviar rest and marinate at room temperature or in the fridge for 15-20 minutes to let flavors meld.

Notes

Use ripe but firm mangoes for best texture. Rinse beans well to remove canned flavor. Adjust Tajin seasoning to taste, starting with less. Letting the salad rest enhances flavor. Avoid over-mixing to keep mango and tomatoes intact. Store leftovers in an airtight container in the fridge for up to 2 days. Add avocado just before serving to prevent browning.
