Fresh Paleo Grilled Peaches with Creamy Coconut Delight

A simple, fresh, and paleo-friendly summer dessert featuring smoky grilled peaches paired with a light, whipped coconut cream topping.

  • 4 ripe but firm fresh peaches (yellow or white varieties)
  • 1 can (about 13.5 oz) full-fat canned coconut cream
  • 2 tablespoons Grade A amber maple syrup
  • 1 teaspoon pure vanilla extract
  • Coconut oil for brushing (about 1-2 tablespoons)
  • Fresh lime juice (optional, for finishing)
  • Pinch of sea salt

Instructions

  1. Rinse and dry 4 ripe peaches. Slice each peach in half and carefully remove the pit.
  2. Preheat your grill or grill pan to medium-high heat, about 375-400°F (190-204°C). Clean and lightly oil the grates.
  3. Brush the cut side of each peach half lightly with melted coconut oil.
  4. Place peaches cut-side down on the grill. Cook for 4-5 minutes until grill marks appear and peaches soften slightly but hold their shape.
  5. Flip peaches and grill the skin side for another 2 minutes.
  6. While peaches grill, scoop the thick coconut cream from the chilled can into a mixing bowl, discarding or saving the watery part.
  7. Add 2 tablespoons maple syrup, 1 teaspoon vanilla extract, and a pinch of sea salt to the coconut cream.
  8. Whip the coconut cream with a hand mixer or whisk until soft peaks form, light and fluffy but not runny.
  9. Arrange grilled peaches on plates and dollop or pipe the creamy coconut delight on top or alongside.
  10. Finish with a squeeze of fresh lime juice if desired and serve immediately.

Notes

Use ripe but firm peaches to avoid mushy texture. Chill coconut cream overnight for best whipping results. If coconut cream doesn’t whip well, it may not be cold enough. Avoid overwhipping to prevent separation. Frozen peaches can be used if thawed and patted dry. For no grill, broil peaches 4-6 minutes watching closely.
