Ingredients

  • Strawberries (sliced)

  • Orange slices or mandarin segments

  • Yellow bell pepper strips
  • Pineapple chunks (fresh or canned in juice)
  • Cucumber slices
  • Sugar snap peas
  • Green grapes
  • Celery sticks
  • Blueberries
  • Purple grapes
  • Purple cabbage leaves or radicchio
  • Hummus (classic or roasted red pepper)
  • Greek yogurt dip with herbs
  • Tangy balsamic glaze
  • Mint or basil leaves for garnish (optional)

Instructions

  1. Wash and dry all produce thoroughly using cold water and a salad spinner or clean kitchen towel to remove moisture.
  2. Slice strawberries and cucumber into thin, even rounds; cut bell peppers into strips about 3-4 inches long; peel and segment oranges or mandarins, removing all pith; trim carrot sticks to uniform sizes.
  3. Arrange colors on the board starting from one side and working across in rainbow order—red, orange, yellow, green, blue/purple. Lay fruits and veggies in neat rows or loosely grouped clusters without overcrowding.
  4. Place small bowls of hummus, yogurt herb dip, or balsamic glaze at strategic points around the board. Sprinkle fresh mint or basil for garnish.
  5. Adjust any pieces that seem out of place or squished. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours before guests arrive.
