Fresh Tajin-Spiced Watermelon Feta Mint Salad Easy Recipe with Lime Dressing

A refreshing and flavorful summer salad combining juicy watermelon cubes, crumbly feta, fresh mint, and a zesty lime dressing spiced with Tajín seasoning. Perfect for quick preparation and summer gatherings.

  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, torn or roughly chopped
  • 1 to 1 1/2 teaspoons Tajín Clásico seasoning
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave (optional)
  • Pinch of salt (if needed)
  • Freshly ground black pepper to taste

Instructions

  1. Cut about 4 cups (about 600g) of seedless watermelon into 1-inch cubes and place in a large mixing bowl.
  2. Rinse and pat dry about 1/4 cup (10g) of fresh mint leaves, then roughly tear or chop and add to the watermelon.
  3. In a small bowl or jar, whisk together juice of 2 limes, 2 tablespoons extra virgin olive oil, 1 teaspoon honey or agave (if using), and 1 to 1 1/2 teaspoons Tajín seasoning. Add salt or more Tajín to taste.
  4. Crumble 1 cup (150g) of cold feta cheese over the watermelon and mint mixture.
  5. Pour the lime dressing over the salad and gently toss with a wooden spoon or silicone spatula until coated, being careful not to mash the watermelon.
  6. Taste and adjust flavors with more lime juice or Tajín if needed. Serve immediately or chill up to 30 minutes before serving.

Notes

Drain excess watermelon juice if too watery before tossing to avoid a soggy salad. Use fresh mint and quality feta for best flavor. Whisk dressing instead of blending for a lighter texture. Chill salad briefly before serving to meld flavors.
