Instructions

  1. In a bowl, soften 8 oz (225 g) of cream cheese until smooth. Add a pinch of garlic powder, lemon zest from half a lemon, and a little salt and pepper. Mix well to combine (about 5 minutes).
  2. Place one large flour tortilla flat on a cutting board, wrinkle-free.
  3. Using a spreading knife or offset spatula, evenly spread about 2 tablespoons (30 g) of the cream cheese mixture over the entire surface of the tortilla (2-3 minutes).
  4. Layer 3 to 4 thin slices of turkey evenly over the cream cheese, overlapping slightly but not too thick.
  5. Scatter about 1/4 cup (7-8 g) of fresh baby spinach leaves evenly over the turkey, keeping leaves flat and avoiding bunching.
  6. Starting at one edge, carefully roll the tortilla into a tight cylinder, keeping pressure even to avoid gaps. Optionally, wrap tightly in plastic wrap or parchment paper and chill for 20-30 minutes to set the shape.
