Fresh Watermelon Feta Mint Salad Recipe With Zesty Lime Dressing

A quick and refreshing summer salad combining juicy watermelon, salty feta, fresh mint, and a zesty lime dressing with honey and olive oil. Perfect for picnics, barbecues, or a light lunch.

  • 4 cups watermelon, cubed (seedless or seeds removed)
  • 1 cup feta cheese, crumbled
  • 1/2 cup fresh mint leaves, roughly chopped
  • Juice of 2 limes (about 3 tablespoons)
  • 1 tablespoon honey
  • 2 tablespoons extra virgin olive oil
  • Pinch of salt, to taste
  • Freshly ground black pepper, a light sprinkle (optional)

Instructions

  1. Rinse the watermelon and pat dry. Cut into roughly 1-inch cubes and place in a large bowl.
  2. Crumble about 1 cup of feta cheese using fingers or a fork.
  3. Rinse mint leaves thoroughly, shake off excess water, and roughly chop to about 1/2 cup.
  4. In a small bowl, whisk together lime juice, honey, and olive oil until combined and slightly emulsified. Add a pinch of salt and a few cracks of black pepper to taste.
  5. Pour the dressing over the watermelon cubes in the large bowl. Add crumbled feta and chopped mint. Gently toss everything together with a large spoon or salad tongs, careful not to crush the watermelon.
  6. Chill the salad in the refrigerator for at least 15 minutes before serving to allow flavors to meld. Serve cold.

Notes

If watermelon is very juicy, drain excess liquid before tossing to avoid sogginess. Taste dressing before adding salt as feta is salty. Prepare salad 30 minutes ahead for best flavor. Vegan substitutions include vegan feta or firm tofu and maple syrup or agave instead of honey.
