  • 8 cups cubed fresh watermelon (seedless if possible)
  • 4 large fresh lemons, juiced (about 1/2 cup lemon juice)
  • 1 cup loosely packed fresh mint leaves, washed
  • 3/4 cup granulated sugar or honey (adjust to taste)
  • 4 cups cold water (filtered preferred)
  • Ice cubes as needed for serving
  • Optional: pinch of salt to balance sweetness
  • Optional: sparkling water for fizz

Instructions

  1. Cut the watermelon into cubes, removing seeds if necessary. Measure about 8 cups (roughly 1.5 pounds or 700 grams). Chill watermelon beforehand if possible.
  2. Place the watermelon cubes in a blender and pulse until smooth, about 30-60 seconds.
  3. Roll lemons on the counter, cut in half, and juice using a citrus juicer. Remove any seeds to yield about 1/2 cup fresh lemon juice.
  4. In a small bowl or pitcher, add mint leaves and sugar or honey. Gently muddle with a muddler or wooden spoon to bruise leaves and release oils without overdoing it.
  5. Pour the watermelon puree, lemon juice, muddled mint with sweetener, and cold water into a large pitcher. Stir well to dissolve the sweetener and blend flavors.
  6. Taste and adjust sweetness or tartness as needed. Add more water if too strong or more lemon juice if too sweet.
  7. Refrigerate the lemonade for at least 1 hour to chill and allow flavors to meld.
  8. Serve over ice cubes, garnished with a sprig of fresh mint or a thin lemon slice. Optionally add sparkling water just before serving for fizz.
