Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken breasts
  • 2 (15-ounce) cans white beans (Great Northern or cannellini), drained and rinsed
  • 1 cup salsa verde (recommended: Herdez brand)
  • 2 cups low-sodium chicken broth
  • 4 ounces cream cheese, softened
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano (Mexican oregano preferred)
  • 1 teaspoon chili powder
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • Fresh cilantro, chopped (for garnish)
  • Shredded Monterey Jack cheese (for garnish)
  • Sliced jalapeños, fresh or pickled (for garnish)
  • Avocado, diced (for garnish)
  • Lime wedges (for garnish)
  • Tortilla chips or crushed tortilla strips (for garnish)

Instructions

  1. Prep the aromatics: Dice the onion and mince the garlic. Aim for ½-inch onion pieces.
  2. Layer the slow cooker: Place diced onion and minced garlic in the bottom. Lay chicken breasts on top in a single layer. Pour drained white beans over the chicken.
  3. Add liquids and seasonings: Pour salsa verde and chicken broth over everything. Sprinkle cumin, oregano, chili powder, salt, and pepper evenly on top. Do not stir.
  4. Cook: Cover and cook on low for 6 hours or on high for 3-4 hours, until chicken is tender and shreds easily.
  5. Shred the chicken: Remove lid. Shred chicken with two forks directly in the slow cooker. Stir gently to combine.
  6. Add cream cheese: Cut softened cream cheese into small cubes and stir into hot chili until melted and smooth. Add a splash of warm broth if too thick.
  7. Taste and adjust: Adjust salt, pepper, cumin, or heat (hot sauce or cayenne) as needed.
  8. Let it rest: Turn off slow cooker and let chili sit uncovered for 10 minutes to thicken and meld flavors.
  9. Serve and garnish: Ladle into bowls and top with desired garnishes like cilantro, cheese, jalapeños, avocado, lime, and tortilla chips.

Notes

Don’t skip softening the cream cheese to avoid clumps. Thaw chicken before using to prevent watery chili. Avoid lifting the lid during cooking. For a thicker chili, remove lid last 30 minutes. For a thinner chili, add extra broth. Leftovers keep 4 days in fridge or 3 months in freezer.
