  • 1 ½ cups (135g) rolled oats
  • ¾ cup (90g) whole wheat flour (can substitute all-purpose flour)
  • ½ teaspoon baking soda
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon salt
  • ½ cup (120ml) unsweetened applesauce
  • ¼ cup (85g) honey (can substitute maple syrup for vegan option)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled, cored, and finely chopped (preferably Fuji or Honeycrisp)
  • ½ cup (60g) chopped walnuts or pecans (optional)
  • 2 tablespoons ground flaxseed (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together rolled oats, whole wheat flour, baking soda, cinnamon, and salt until well combined.
  3. In a separate bowl, stir together unsweetened applesauce, honey, egg, and vanilla extract until thoroughly mixed.
  4. Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined. Avoid overmixing.
  5. Fold in the finely chopped apple and, if using, the chopped walnuts or pecans.
  6. Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheet about 2 inches apart, making around 18-20 cookies.
  7. Bake for 12-15 minutes until edges are lightly golden but centers remain soft. Tent with foil if browning too quickly.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not overmix the batter to keep cookies tender. Use room temperature eggs for better emulsification. Finely chop apples for even cooking. Check cookies at 12 minutes to avoid overbaking. Store in an airtight container with a slice of bread to keep soft longer. Batter can be refrigerated overnight for enhanced flavor.
