Healthy Turkey Chili Stuffed Sweet Potatoes

Perfectly roasted sweet potatoes filled with a smoky, savory turkey chili. This healthy, satisfying meal is quick to make, perfect for meal prep, and packed with flavor.

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil (for sweet potatoes)
  • ½ teaspoon salt (for sweet potatoes)
  • 1 pound lean ground turkey (93/7 or 99/1)
  • 1 tablespoon olive oil (for chili)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced (optional)
  • 2 tablespoons tomato paste
  • 1 can (15 ounces) fire-roasted diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • ½ cup shredded sharp cheddar cheese (optional topping)
  • ¼ cup Greek yogurt or sour cream (optional topping)
  • Fresh cilantro, chopped (optional topping)
  • 1 avocado, diced (optional topping)
  • Lime wedges (optional topping)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Scrub sweet potatoes clean and pat dry. Prick each potato 4-5 times with a fork.
  3. Rub each potato with 1 tablespoon olive oil and sprinkle with ½ teaspoon salt. Place on prepared baking sheet.
  4. Roast for 40-50 minutes, until a fork slides easily into the thickest part. Let cool slightly.
  5. While potatoes roast, heat 1 tablespoon olive oil in a large pot over medium heat.
  6. Add diced onion and cook for 4-5 minutes until translucent.
  7. Add minced garlic and diced red bell pepper. Cook for 2 minutes, stirring frequently.
  8. Add ground turkey. Break it up and cook until no longer pink, about 6-8 minutes. Drain excess liquid if needed.
  9. Stir in tomato paste and cook for 1 minute.
  10. Add chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne (if using). Cook for 30 seconds until fragrant.
  11. Pour in fire-roasted tomatoes (with juices), drained beans, and chicken broth. Stir to combine.
  12. Bring to a boil, then reduce heat to low. Simmer uncovered for 15-20 minutes, stirring occasionally. Adjust seasoning to taste.
  13. Once sweet potatoes are cool enough to handle, make a slit down the center of each. Gently push ends toward the middle to open.
  14. Fluff insides slightly with a fork. Place each potato on a plate or in a shallow bowl.
  15. Spoon turkey chili generously over each potato (about ¾ cup per potato).
  16. Top with shredded cheese, Greek yogurt, fresh cilantro, diced avocado, and a squeeze of lime if desired. Serve immediately.

Notes

Don’t overcook sweet potatoes; they should be tender but hold their shape. Let chili simmer for at least 15 minutes for best flavor. Drain ground turkey well to avoid watery chili. Toast spices for 30 seconds to activate oils. Make extra chili as it’s great on its own or over rice. For meal prep, store chili and potatoes separately for up to 4 days.
