This homemade pumpkin spice latte with real pumpkin is quick, easy, and made with simple ingredients. It delivers a velvety texture and balanced spice flavor that beats any coffee shop version.

Ingredients

Scale
  • 2 tablespoons (30g) pumpkin purée (100% pure, not pie filling)
  • 1 cup (240ml) whole milk (or oat milk for dairy-free)
  • ½ cup (120ml) strong brewed coffee or espresso (dark roast preferred)
  • 12 tablespoons (12-24g) granulated sugar (or brown sugar, maple syrup, honey)
  • 1 teaspoon pumpkin pie spice (or homemade blend: ½ tsp cinnamon, ¼ tsp ginger, ⅛ tsp nutmeg, ⅛ tsp allspice, pinch cloves)
  • ½ teaspoon vanilla extract (pure preferred)
  • Whipped cream (for topping, optional)
  • Cinnamon or pumpkin pie spice (for garnish)

Instructions

  1. Brew your coffee or espresso and set aside.
  2. In a small saucepan, combine 1 cup whole milk and 2 tablespoons pumpkin purée. Whisk vigorously until mostly incorporated.
  3. Heat over medium-low heat, whisking frequently, until the mixture warms and turns a deeper orange (about 2 minutes).
  4. Add 1 teaspoon pumpkin pie spice, 1-2 tablespoons sugar, and ½ teaspoon vanilla extract. Whisk until dissolved. Taste and adjust sweetness.
  5. Continue heating until steaming but not boiling (small bubbles around edges, about 2-3 more minutes).
  6. Remove from heat and pour in the brewed coffee or espresso. Whisk to combine.
  7. For extra foam, use a handheld milk frother for 15-20 seconds or blend on low for 10 seconds (careful with hot liquid).
  8. Pour into a mug, leaving space for whipped cream.
  9. Top with whipped cream and dust with cinnamon or pumpkin pie spice.
  10. Serve immediately.

Notes

Don’t boil the milk—keep at a gentle simmer. Whisk vigorously to prevent clumps. Taste and adjust spices and sweetness as you go. For dairy-free, use oat milk. For a sugar-free version, use monk fruit sweetener or erythritol. Leftover latte can be stored in the refrigerator for up to 2 days; reheat gently.
