  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, cold and cubed

Instructions

  1. Brown the butter: Place 1/2 cup unsalted butter in a light-colored saucepan over medium heat. Stir frequently as it melts, foams, and turns golden brown with a nutty aroma. Remove from heat and let cool slightly.
  2. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  3. In a medium bowl, whisk together mashed bananas, browned butter, granulated sugar, eggs, vanilla extract, and sour cream until smooth.
  4. In another bowl, sift together all-purpose flour, baking soda, and salt.
  5. Gently fold dry ingredients into the wet banana mixture using a spatula. Do not overmix.
  6. Prepare walnut streusel: Mix chopped walnuts, brown sugar, flour, and cinnamon in a small bowl. Add cold cubed butter and blend with fingers or pastry cutter until crumbly.
  7. Pour batter into prepared loaf pan and evenly sprinkle walnut streusel on top.
  8. Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool bread in pan on a wire rack for 15 minutes, then remove from pan and cool completely.

Use a light-colored pan to brown butter to monitor color change. Do not overmix batter to keep bread tender. Cold butter is key for crunchy streusel.
