  • 2 cups (about 250g) shredded zucchini (no need to peel)
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 2 large eggs, room temperature
  • ½ cup (120ml) vegetable oil or melted coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan lightly with butter or non-stick spray.
  2. Shred about 2 cups of zucchini using a box grater or food processor; no need to squeeze out moisture.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. In a separate bowl, beat the eggs lightly, then add granulated sugar, brown sugar, vegetable oil, and vanilla extract; mix until smooth and slightly pale.
  5. Pour the wet ingredients into the dry ingredients and gently fold until just combined; avoid overmixing.
  6. Fold in the shredded zucchini and chocolate chips carefully to distribute evenly.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, starting to check at 50 minutes by inserting a toothpick into the center; it should come out with a few moist crumbs but no wet batter.
  9. Let the bread cool in the pan for about 15 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not squeeze out the zucchini moisture to keep the bread moist. Avoid overmixing the batter to prevent a tough crumb. Tent with foil if the bread browns too quickly. Room temperature eggs and oil improve texture. For gluten-free, substitute flour with a 1-to-1 gluten-free blend and check baking powder for gluten. For dairy-free, use coconut oil and dairy-free chocolate chips.
