  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped

  • 1 tablespoon fresh lemon juice
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: ½ teaspoon smoked paprika
  • Optional: a pinch of red pepper flakes

Instructions

  1. Prep the lobster tails (10 minutes): Using kitchen scissors, cut down the center of the shell lengthwise, stopping just before the tail fin. Gently pry the shell open and carefully lift the lobster meat, resting it on top of the shell.
  2. Make the garlic herb butter (5 minutes): In a small bowl, combine melted butter, minced garlic, chopped parsley, thyme, lemon juice, salt, and black pepper. Stir well until fully mixed.
  3. Preheat the grill to medium-high heat, around 375°F (190°C). If using charcoal, let the coals burn down to a steady medium heat.
  4. Brush lobster tails generously with the garlic herb butter mixture, reserving some for basting during grilling.
  5. Grill the lobster tails meat-side down first for 4-5 minutes until grill marks appear and the meat starts to firm up.
  6. Flip carefully, baste with remaining butter, and grill for another 3-5 minutes until the meat is opaque and reaches an internal temperature of 140-145°F (60-63°C).
  7. Remove from the grill and let rest for 2 minutes before serving.

Notes

Do not overcook lobster tails to avoid rubbery texture. Keep an eye on the meat color and internal temperature. Preheat the grill properly for even cooking. If flare-ups occur, move lobster tails to a cooler part of the grill. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently in a low oven wrapped in foil. Avoid microwaving to prevent toughening the meat.
