Perfect Grilled Peaches Recipe with Bourbon Vanilla Ice Cream

  • 4 ripe but firm peaches, halved and pitted
  • 3 tablespoons honey
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon melted unsalted butter
  • 1 teaspoon fresh lemon juice
  • 1 pint (450 ml) bourbon vanilla ice cream
  • Optional: fresh mint leaves or toasted pecans for garnish

Instructions

  1. Rinse the peaches and pat them dry. Cut each peach in half and gently remove the pit using a spoon or the tip of a knife. Set aside.
  2. In a small bowl, whisk together the honey, ground cinnamon, melted butter, and lemon juice until smooth.
  3. Preheat your grill or grill pan to medium-high heat (about 375°F). Lightly oil the grates to prevent sticking.
  4. Using a basting brush, coat the cut side of each peach half generously with the honey glaze.
  5. Place the peaches cut-side down on the grill. Cook for about 3-4 minutes until grill marks appear and peaches start to soften.
  6. Flip carefully and grill the skin side for another 2 minutes. The peaches should be tender but not mushy.
  7. Remove the peaches from the grill and arrange them on chilled plates.
  8. Immediately top each peach half with a generous scoop of bourbon vanilla ice cream.
  9. Optionally, sprinkle with fresh mint leaves or toasted pecans before serving.

Notes

Use peaches that are ripe but firm to avoid mushy texture. Brush glaze just before grilling to prevent burning. Let peaches rest briefly after grilling before adding ice cream to avoid immediate melting. For dairy-free, use coconut-based bourbon vanilla ice cream. If no grill available, broil peaches in oven 5-7 minutes per side.
