These adorable mini football-shaped cheese ball bites are the ultimate game day appetizer. Made with cream cheese, sharp cheddar, and a smoky spice blend, they are fast, foolproof, and a guaranteed crowd-pleaser.

  • 16 oz cream cheese, softened
  • 2 cups sharp cheddar cheese, shredded
  • 4 oz cream cheese, softened (for the coating)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 cup finely chopped pecans or walnuts
  • 1/4 cup finely chopped fresh chives or parsley (optional)
  • Pretzel sticks or thin strips of bell pepper (for laces)

Instructions

  1. Soften the cream cheese: Take the 16 oz of cream cheese out of the fridge about 30-45 minutes before starting. It should be soft to the touch but not melty.
  2. Mix the cheese base: In a large mixing bowl, combine the softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, cayenne (if using), and a pinch of salt and pepper. Beat with a hand mixer on medium speed until smooth and well-combined.
  3. Chill the mixture: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up.
  4. Prepare the coating: In a small shallow bowl, combine the finely chopped pecans (or walnuts) and optional chives or parsley. If using the extra 4 oz of cream cheese for coating, leave it out to soften.
  5. Shape the footballs: Line a baking sheet with parchment paper. Using a small cookie scoop or tablespoon, scoop even portions of the chilled cheese mixture. Roll each portion into a smooth ball, then shape into an oval (football shape). Place on the prepared baking sheet.
  6. Apply the coating: If using the extra cream cheese, take a tiny bit and roll it between your fingers to soften, then gently coat the outside of each football. Otherwise, roll each football directly in the nut mixture, pressing gently to adhere evenly.
  7. Add the laces: Break pretzel sticks into small pieces (about 1/2 inch long). Gently press 2-3 pieces into the top of each cheese ball, parallel to each other, to create laces. If using bell pepper strips, cut into tiny rectangles and press in the same way.
  8. Final chill: Return the baking sheet to the refrigerator for at least 30 minutes, or up to 24 hours, to firm up completely.
  9. Serve: Arrange the mini football cheese ball bites on a serving platter. Serve with crackers, celery sticks, or cucumber slices.

Notes

For best results, use full-fat cream cheese and shred the cheddar yourself. Toasting the nuts enhances flavor. The cheese balls can be made up to 24 hours in advance. If the mixture is too sticky, chill longer or dampen hands with cold water.
