Instructions

  1. Prepare the red velvet cake crumbs by crumbling 1 cup (120 grams) of red velvet cake finely in a mixing bowl. Let fresh cake dry out for a few hours to avoid sogginess. (10 minutes prep)
  2. Melt the white chocolate chips with 1 tablespoon (14 grams) unsalted butter and 2 tablespoons (30 ml) heavy cream in a microwave-safe bowl in 20-second bursts, stirring each time until smooth. Alternatively, melt gently in a double boiler. (5 minutes)
  3. Stir a pinch of sea salt into the melted chocolate to balance the sweetness. (30 seconds)
  4. Gently fold the red velvet crumbs into the melted white chocolate until just combined, ensuring crumbs are well-coated but not dissolved. (2 minutes)
  5. Pour the mixture onto a lined baking sheet and spread evenly to about 1/4 inch (6 mm) thickness using a spatula. (5 minutes)
