An effortless, interactive mimosa bar featuring sparkling apple cider and Prosecco with festive garnishes like cranberries, pomegranate seeds, and cinnamon sticks. Perfect for lazy Sunday brunches or holiday gatherings.

Ingredients

Scale
  • 1 large bottle sparkling apple cider, chilled
  • 12 bottles Prosecco or Cava, chilled
  • 1 cup pomegranate juice (optional)
  • Honey or maple syrup (optional)
  • Apple brandy or bourbon (optional)
  • 1 cup fresh cranberries
  • 1 cup pomegranate seeds
  • 23 apples, thinly sliced (tossed in lemon juice)
  • Cinnamon sticks (1 per glass)
  • Star anise (1 per glass, optional)
  • Fresh rosemary sprigs (a few)
  • Vanilla extract or vanilla bean paste (tiny bottle)

Instructions

  1. Chill everything: sparkling apple cider, sparkling wine, and glasses for at least 3-4 hours.
  2. Prepare garnishes: rinse cranberries and pomegranate seeds, pat dry. Thinly slice apples and toss in lemon juice to prevent browning. Break cinnamon sticks if long.
  3. Set the stage: place a tray or platter on the counter or table. Arrange small bowls of garnishes around it in a balanced way.
  4. Arrange liquids: place chilled bottles of cider and wine on the tray. If using pomegranate juice or spirits, put in small pitchers or decanters nearby. Add honey or maple syrup.
  5. Add the ‘secret’ ingredient: place the tiny bottle of vanilla extract or vanilla bean paste next to garnishes with a sign saying ‘Add a tiny drop!’
  6. Provide serving spoons: put a small spoon in each bowl of garnishes.
  7. Create a simple serving guide (optional): make a tent card with suggested combinations like ‘The Classic: Fill 1/3 with cider, 2/3 with Prosecco, garnish with cinnamon stick and apple slice.’
  8. Let guests go wild: allow everyone to create their own masterpiece.

Notes

Don’t overfill the glass; fill no more than 1/3 with juice or cider. Pour sparkling wine slowly down the side to preserve bubbles. Use a dry sparkling wine to balance sweetness. A tiny drop of vanilla extract adds warmth and depth. Prep fruit the night before to save time.
