  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 large head broccoli, cut into florets
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 tablespoons low-sodium soy sauce
  • 1/4 cup (60 ml) chicken broth
  • Freshly ground black pepper, to taste
  • Salt, to taste
  • Pinch of red pepper flakes (optional)
  • 2 stalks green onions, sliced thinly for garnish

Instructions

  1. Cut the chicken into 1-inch pieces, wash and chop broccoli into bite-sized florets, and mince the garlic cloves (about 10 minutes prep).
  2. In a small bowl, combine 2 tablespoons soy sauce and 1/4 cup chicken broth; set aside.
  3. Heat a large non-stick skillet or wok over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter. Wait until butter melts and foams but does not brown (about 1 minute).
  4. Add chicken pieces in a single layer. Let sear without moving for 2-3 minutes until golden brown on the underside. Stir and cook another 2-3 minutes until mostly cooked through (total about 6 minutes).
  5. Add minced garlic and stir quickly for 30 seconds until fragrant, avoiding burning.
  6. Add broccoli florets and stir to coat. Pour in soy sauce and broth mixture. Cover pan with lid and steam for 3-4 minutes until broccoli is tender but still crisp.
  7. Remove lid. Add remaining 2 tablespoons butter, stirring until melted and coating chicken and broccoli. Season with salt, black pepper, and optional red pepper flakes. Adjust seasoning to taste.
  8. Garnish with sliced green onions and serve immediately, ideally over steamed rice or noodles.

Notes

Do not overcrowd the pan when cooking chicken; cook in batches if needed to get a good sear. Add garlic after chicken has partially cooked to avoid burning. Steam broccoli just enough to keep it tender-crisp. Adjust salt carefully since soy sauce adds saltiness. For thicker broccoli stems, steam separately for 1 minute before adding. Use tamari for gluten-free and vegan butter or extra olive oil for dairy-free versions.
