A quick and easy honey garlic shrimp and rice dish ready in under 15 minutes, perfect for busy weeknights or last-minute cravings. The sticky, sweet sauce with tender shrimp and fluffy rice makes a comforting and impressive meal.

  • 1 pound peeled and deveined shrimp, medium or large size
  • 2 tablespoons pure honey
  • 3 cloves garlic, minced
  • 3 tablespoons low sodium soy sauce
  • 1 cup jasmine or basmati rice
  • 1 tablespoon olive oil or vegetable oil
  • 2 stalks green onions, thinly sliced
  • Pinch of red pepper flakes (optional)
  • 1 teaspoon fresh lemon juice

Instructions

  1. Rinse 1 cup jasmine or basmati rice under cold water until water runs clear. In a saucepan, combine rinsed rice with 1 ½ cups water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork before serving.
  2. While the rice cooks, pat dry 1 pound peeled, deveined shrimp with paper towels. Mince 3 garlic cloves and slice 2 green onions thinly.
  3. In a small bowl, whisk together 2 tablespoons honey, 3 tablespoons soy sauce, and a pinch of red pepper flakes if using. Set aside.
  4. Heat 1 tablespoon olive or vegetable oil in a large non-stick skillet over medium-high heat. Add shrimp in a single layer and cook 2-3 minutes per side until pink and opaque, flipping once. Remove shrimp and set aside.
  5. Reduce heat to medium, add minced garlic to the same pan, and cook for about 30 seconds until fragrant but not browned.
  6. Pour the honey-soy mixture into the pan. Stir and cook for 1-2 minutes until the sauce thickens slightly and becomes glossy.
  7. Return shrimp to the pan, tossing gently to coat evenly with the sauce. Cook for another minute to warm through and let flavors meld.
  8. Squeeze fresh lemon juice over the shrimp, stir in half the sliced green onions, and serve immediately over the cooked rice. Garnish with remaining green onions.

Notes

If the sauce is too thick, add a splash of water to loosen it. If too thin, cook longer until syrupy. Avoid overcooking shrimp to prevent rubbery texture. Pat shrimp dry before cooking for better sear. Use medium-high heat for best results. Sauce can be prepared ahead of time.
