Ingredients

Scale
  • 1/2 cup (45g) old-fashioned rolled oats
  • 1/2 cup (120ml) milk of choice (dairy or plant-based such as almond, oat, or soy milk)
  • 2 tablespoons (32g) peanut butter (natural, creamy or crunchy)
  • 1 scoop (about 30g) vanilla protein powder (whey or plant-based)
  • 1/4 cup (60g) Greek yogurt (dairy or dairy-free)
  • 1 teaspoon sweetener (honey, maple syrup, or sugar-free like stevia)
  • 1 teaspoon chia seeds (optional)
  • Pinch of salt
  • Optional toppings: sliced bananas, chopped nuts, dark chocolate chips, fresh berries

Instructions

  1. In a jar or container, combine 1/2 cup (45g) old-fashioned rolled oats with 1/2 cup (120ml) milk. Stir gently to moisten all the oats.
  2. Add 2 tablespoons (32g) peanut butter. If thick, warm for 10 seconds in the microwave to ease mixing. Stir until oats have a peanut butter swirl.
  3. Add 1 scoop (about 30g) vanilla protein powder and 1/4 cup (60g) Greek yogurt. Stir well to avoid clumps. (Tip: pre-mix protein powder with a little milk if clumpy.)
  4. Add 1 teaspoon sweetener and 1 teaspoon chia seeds if using. Finish with a pinch of salt. Stir until evenly combined.
  5. Seal the jar and refrigerate overnight or for at least 4 hours to thicken.
  6. In the morning, stir the oats, add desired toppings, and enjoy cold or warmed for 30 seconds in the microwave.

Notes

Use certified gluten-free oats if gluten-sensitive. Pre-mix protein powder with a small amount of milk to avoid clumps. Warm peanut butter slightly if too thick for easier mixing. Chia seeds help thicken the oats. Store in fridge up to 5 days. Can be warmed before serving if preferred.
