A quick and easy homemade summer treat combining frozen strawberries and fresh lemon juice for a perfectly icy, refreshing slushie.

  • 2 cups frozen strawberries (about 300 grams)
  • 1/2 cup freshly squeezed lemon juice (120 ml)
  • 1/3 cup granulated sugar (65 grams), adjust to taste or substitute with honey or agave syrup
  • 1 cup cold water (240 ml)
  • 1 to 1 1/2 cups ice cubes (about 150 to 225 grams)
  • Optional: a handful of mint leaves for garnish or blending
  • Optional: lemon slices for garnish

Instructions

  1. Freeze your strawberries overnight if not using pre-frozen (prep time: 10 minutes plus freezing time).
  2. Squeeze 1/2 cup (120 ml) fresh lemon juice using a citrus juicer and strain out seeds (prep time: 5 minutes).
  3. Add frozen strawberries, lemon juice, sugar, and cold water to a blender. Start blending on low speed to break up the berries.
  4. Gradually add ice cubes while blending on medium-high speed until the slushie reaches a thick, icy but drinkable consistency (2-3 minutes).
  5. Pause to taste and adjust sweetness by adding more sugar or honey if needed; blend briefly again. If too thick, add a splash of cold water and blend once more.
  6. Serve immediately in chilled glasses, garnished with mint leaves or lemon slices if desired.

Notes

Freeze strawberries overnight for best texture. Use cold water to keep the slushie refreshingly chilled. Adjust sweetness to taste. Blend in pulses to avoid overheating the mixture. For a fizzy twist, substitute cold water with sparkling water when serving.
