  • 3 medium fresh ripe peaches, sliced
  • 1012 fresh mint leaves
  • ½ cup granulated sugar (100 g), adjust to taste or substitute with honey or agave syrup
  • 6 cups water (1.4 liters)
  • 2 tablespoons fresh lemon juice (30 ml)
  • Ice cubes for serving
  • Optional: peach slices for garnish
  • Optional: extra mint sprigs for decoration

Instructions

  1. Prepare the peach syrup: In a medium saucepan, combine sliced peaches, sugar, and 1 cup (240 ml) of water. Bring to a gentle simmer over medium heat. Stir occasionally, letting the peaches soften and release their juices, about 8-10 minutes. Do not rush this step to avoid caramelizing or burning.
  2. Steep the tea: While the syrup simmers, bring the remaining 5 cups (1.2 liters) of water to a boil. Remove from heat and add the black tea bags. Let steep for 5 minutes. Avoid over-steeping to prevent bitterness.
  3. Strain the syrup: Once the peaches are soft and the syrup has thickened slightly, strain the mixture through a fine mesh sieve into a large pitcher. Press gently on the peaches to extract flavor but avoid too much pulp. Reserve peach slices for garnish if desired.
  4. Remove tea bags and combine: Take out the tea bags from the steeped tea, then pour the tea into the pitcher with the peach syrup. Stir to combine thoroughly.
  5. Add fresh mint: Lightly bruise the mint leaves with your fingers or a muddler to release their aroma, then add them to the pitcher. Cover and let steep in the fridge for at least 1 hour. Adjust steeping time to preference for stronger herbal flavor.
  6. Finish with lemon juice and serve: Just before serving, stir in fresh lemon juice. Fill glasses with ice cubes, pour the peach iced tea over, and garnish with peach slices and mint sprigs. Chill glasses beforehand for extra cold tea.
