A hearty and flavorful breakfast burger featuring crispy bacon, a juicy beef patty, and a perfectly fried egg with a runny yolk, all tied together with a simple homemade sauce. Quick and easy to make, perfect for busy mornings or brunch.

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and freshly ground black pepper, to taste
  • 4 slices thick-cut bacon
  • 4 large eggs, preferably free-range
  • 4 burger buns, lightly toasted (brioche buns recommended)
  • Leafy greens like arugula or baby spinach (optional)
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup or honey
  • Pinch of smoked paprika
  • Optional extras: pickled jalapeños, sliced avocado, cheddar or Swiss cheese

Instructions

  1. In a mixing bowl, combine ground beef with garlic powder, onion powder, salt, and pepper. Mix gently and divide into 4 equal portions. Shape each into a patty about ¾ inch thick with a slight indentation in the center. (10 minutes)
  2. Heat skillet over medium heat. Cook bacon slices until crispy, about 5-7 minutes, turning occasionally. Remove and drain on paper towels, leaving some bacon fat in the pan. (7-8 minutes)
  3. Heat grill pan or skillet over medium-high heat. Cook burger patties for 3-4 minutes per side for medium doneness. Add cheese slices during the last minute if using. (8-10 minutes)
  4. Using bacon fat, reduce heat to medium-low. Crack eggs into pan and cook until whites are set but yolks remain runny, about 2-3 minutes. For over-easy, flip and cook another 30 seconds. (5 minutes)
  5. Toast burger buns lightly in a toaster or dry pan until golden and slightly crisp. (2-3 minutes)
  6. In a small bowl, whisk mayonnaise, Dijon mustard, maple syrup, and smoked paprika until smooth. (2 minutes)
  7. Assemble burgers by spreading sauce on both bun halves. Layer bottom bun with greens, burger patty, bacon slices, and fried egg. Top with bun crown and serve immediately.

Notes

Do not overwork the ground beef to keep patties tender. Use bacon fat to cook eggs for extra flavor. Make a slight indentation in patties to prevent puffing. Cover eggs briefly to cook whites faster without overcooking yolks. Toast buns just enough to add crunch but avoid drying out.
