  • 3 large garlic cloves, thinly sliced
  • 28 oz canned whole peeled tomatoes (800 g)
  • 1 medium carrot, finely grated
  • 68 fresh basil leaves, torn
  • 1 tsp dried oregano
  • 1 tsp salt, or to taste
  • 1/2 tsp freshly ground black pepper
  • Optional: 1 tsp sugar if tomatoes are too acidic

Instructions

  1. Pour the olive oil into a medium saucepan and add the thinly sliced garlic cloves. Warm over low heat for about 10 minutes, stirring occasionally, until the garlic is lightly golden and fragrant.
  2. Remove the garlic slices with a slotted spoon and set aside for garnish or discard. Keep the infused oil in the pan.
  3. Stir in the grated carrot and cook for 3 minutes over medium-low heat to soften and build sweetness.
  4. Add the canned whole peeled tomatoes with their juice. Use a wooden spoon to gently crush the tomatoes while stirring.
  5. Stir in salt, pepper, dried oregano, and torn basil leaves. Add the optional sugar if the tomatoes taste too acidic.
  6. Reduce heat to low and simmer gently for 20-25 minutes, stirring occasionally until the sauce thickens and develops a deep color.
  7. Taste and adjust seasoning as needed. For a smoother sauce, strain or blend briefly.
  8. Serve warm over low-FODMAP pasta, roasted vegetables, or as a base for soups and stews.

Notes

Keep the heat low during garlic infusion to avoid burning the garlic. Slow simmering develops flavor and prevents bitterness. Grated carrot balances acidity naturally. Sauce tastes better the next day. Can be frozen for up to 3 months in airtight containers.
