Smoky Chipotle Black Bean Chili: Easy 1-Pot Vegan Recipe

A hearty, plant-based chili made with black beans, chipotle peppers in adobo sauce, and simple pantry staples. This one-pot meal is quick to prepare, deeply flavorful, and perfect for weeknight dinners or meal prep.

  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 23 chipotle peppers in adobo sauce, minced
  • 1 tbsp adobo sauce (from the can)
  • 2 (15 oz) cans black beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes (fire-roasted preferred)
  • 1 cup frozen or canned corn
  • 1 cup vegetable broth (low-sodium)
  • 1 tbsp fresh lime juice
  • Salt and black pepper to taste
  • Optional garnishes: fresh cilantro, avocado slices, sour cream or vegan yogurt, crushed tortilla chips

Instructions

  1. Heat olive oil in a large Dutch oven or stockpot over medium heat. Add diced onion and a pinch of salt; sauté for 5 minutes until translucent and soft.
  2. Add minced garlic to the pot and cook for 1 minute, stirring constantly to prevent burning.
  3. Add ground cumin and smoked paprika; stir to coat the onions and cook for 30-60 seconds to bloom the spices.
  4. Add minced chipotle peppers and 1 tablespoon of adobo sauce; cook for 1 minute.
  5. Add drained black beans, diced tomatoes with juices, and corn; stir to combine and simmer for 2-3 minutes.
  6. Pour in vegetable broth. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 15 minutes.
  7. Remove lid and mash about one-third of the beans against the side of the pot with a potato masher or spoon to thicken the chili.
  8. Stir mashed beans back in. Taste and adjust seasoning with salt, pepper, and lime juice.
  9. Remove from heat and let rest for 5 minutes before serving.

Notes

For a thicker chili, simmer uncovered for the last 5-10 minutes. For a milder heat, use one pepper and remove the seeds. This recipe is naturally gluten-free, but check broth labels. It freezes well for up to 3 months.
