  • 1 large ripe mango, peeled and diced
  • 12 medium fresh jalapeños, sliced thin
  • 1 cup (240 ml) fresh lime juice (about 8 limes)
  • ½ cup (120 ml) agave nectar
  • ½ cup (120 ml) triple sec or orange liqueur
  • 1 cup (240 ml) club soda or sparkling water (optional)
  • Salt and Tajín for rimming glasses
  • Ice cubes

Instructions

  1. Make the Jalapeño Simple Syrup: In a small saucepan, combine 1 cup (240 ml) water with 1 cup (200 g) granulated sugar. Heat over medium, stirring until the sugar dissolves. Add the sliced jalapeños and simmer gently for 5 minutes. Remove from heat and let steep for another 10 minutes. Strain the syrup through a fine mesh to remove seeds and jalapeño pieces. Set aside to cool.
  2. Prepare the Mango Puree: Peel and dice the mango. Place the fruit in a blender or food processor and puree until smooth. Optionally strain to remove stringy bits.
  3. Juice the Limes: Use a citrus juicer to extract 1 cup (240 ml) fresh lime juice.
  4. Combine Margarita Ingredients in Pitcher: In a large pitcher, mix 2 cups (480 ml) tequila blanco, ½ cup (120 ml) triple sec, ½ cup cooled jalapeño syrup (adjust to taste), fresh lime juice, and mango puree. Stir well.
  5. Add Sparkle and Chill (optional): Add 1 cup (240 ml) club soda just before serving. Add plenty of ice cubes and stir gently.
  6. Rim the Glasses: Rub lime around rims and dip into a mix of salt and Tajín.
  7. Serve and Enjoy: Pour margarita into prepared glasses over ice. Garnish with a slice of jalapeño or mango wedge.

Notes

Adjust jalapeño slices in the syrup to control heat. Use fresh lime juice and ripe mango for best flavor. The simple syrup can be made up to 3 days ahead and stored refrigerated. For a low-carb version, reduce or skip agave nectar. Frozen mango can be used if thawed and drained. Taste and adjust sweetness or heat before serving.
