  • 34 pounds pork shoulder (also called pork butt), trimmed of excess fat
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and freshly ground black pepper, to taste
  • 1 cup ketchup
  • 1/4 cup bourbon
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar, packed
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • Slider buns or small soft rolls
  • Coleslaw (optional)

Instructions

  1. Pat the pork shoulder dry with paper towels. Combine smoked paprika, cumin, chili powder, salt, and pepper in a small bowl, then rub evenly all over the pork.
  2. Place the sliced onion and minced garlic at the bottom of the slow cooker. Pour in the chicken broth.
  3. Place the seasoned pork shoulder on top of the onions and garlic, fat side up. Cover and set the slow cooker to low for 8-9 hours, or high for 4-5 hours, until pork is tender enough to shred.
  4. While the pork cooks, combine ketchup, bourbon, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper in a medium saucepan. Bring to a simmer over medium heat, stirring frequently. Cook for 10-15 minutes until slightly thickened, then remove from heat.
  5. Transfer the cooked pork to a large bowl. Use two forks or meat claws to shred the pork into bite-sized pieces, discarding large chunks of fat.
  6. Pour the bourbon BBQ sauce over the shredded pork and toss gently until evenly coated. Adjust seasoning if needed.
  7. Toast slider buns lightly. Assemble sliders by piling pulled pork on buns and adding coleslaw if desired.

Notes

Keep the slow cooker lid closed during cooking to retain moisture. If pork isn’t shredding easily, cook longer. Toast buns to prevent sogginess. Store sauce and pork separately if freezing. For gluten-free, use gluten-free buns and verify Worcestershire sauce is gluten-free. Bourbon can be substituted with whiskey or smoky chipotle sauce.
