This easy one-bowl banana bread delivers a perfect crackly top and tender crumb with minimal effort. No mixer required, just a bowl and a fork for a bakery-style loaf every time.

  • 3 large ripe bananas (about 1 ½ cups mashed)
  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Optional: ½ cup chocolate chips
  • Optional: ½ cup chopped walnuts or pecans
  • Optional: 1 tablespoon cinnamon
  • Optional: Turbinado sugar for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly spray exposed ends with non-stick spray.
  2. Mash bananas in a large mixing bowl with a fork or potato masher until mostly smooth with a few small lumps (about 1 ½ cups).
  3. Add melted butter to mashed bananas and stir until combined and slightly shiny.
  4. Add sugar and stir vigorously for about 30 seconds until mixture lightens slightly.
  5. Add eggs and vanilla one at a time, stirring well after each addition until smooth and glossy.
  6. Add flour, baking soda, and salt on top of wet mixture. Stir just until no streaks of flour remain (10-12 strokes). Do not over-mix.
  7. Fold in any add-ins (chocolate chips, nuts, etc.) gently until evenly distributed.
  8. Pour batter into prepared loaf pan and spread evenly. Sprinkle generously with turbinado sugar if desired.
  9. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil if top browns too quickly.
  10. Cool in pan on a wire rack for 15 minutes, then lift out using parchment overhang and cool completely on rack (at least 1 hour) before slicing.

Notes

Use very ripe (almost black) bananas for best flavor. Do not over-mix the batter to avoid tough bread. Let cool completely before slicing for best texture. Bread keeps at room temperature for up to 4 days or frozen for up to 3 months.
